Branching pattern, chain length and solubility all affect how the molecule is recognized in the body — which is why "contains mushrooms" on a label tells you far less than a stated beta-glucan percentage would.
Why extraction method matters
Beta-glucans are water-soluble, so hot-water extraction is the traditional way to concentrate them. Fruiting-body extracts and mycelium-on-grain products can differ significantly in beta-glucan content per gram.
